Peanut Butter Granola

This is a basic recipe—you can substitute lots of things.


8 c. rolled oats (you may sub 1 c. of nuts for 1 c. oats)
1 c. unsweetened coconut flakes
½ c. flour (may use almond)
Mix above ingredients in a large bowl.
Mix the following in a medium pot and warm to melt:
¾ c. butter
1 c. honey
½ c. rapadura
1 c. peanut butter
2 tsp vanilla
½ c. whey or kefir (add last after removed from heat so it doesn’t kill the kefir)


Mix wet and dry ingredients together. Let soak overnight. Then spread onto 2 jelly roll pans and bake for 60 minutes at 250 degrees, stirring half way through. The longer you bake it, the crispier it gets. It will also harden as it cools.
