Beef Lentil Vegetable Soup Recipe

Ingredients:

1 lb lean ground beef
1 1/2 cup dry lentils, rinsed
1 cup chopped carrots
1 cup chopped onion
1 cup chopped celery
2 cups beef stock
6 cups tomato juice or 3 cans tomato sauce
3 cups water
1 tsp salt
pepper to taste

Directions:

Brown beef, add remaining ingredients. Simmer for 1 1/2 to 2 hours.
