Basic Roux


2 Tblsp butter or your choice of fat (You may need to increase for larger portions, but keep the fat and flour in equal ratio of 1:1)

2 Tblsp flour

½ tsp salt

Dash of paprika or cayenne pepper

Ground black pepper—few shakes

1 cup of your desired liquid: milk, cream, half and half, or soup stock, (use more if needed).


In a small pan, melt butter, add salt and seasonings, then flour. Stir to a smooth paste. When thick, (not long) add desired liquid.

Cook till comes to a boil, still stirring.


To make homemade mac-n-cheese, after combining butter, flour an seasonings,  add 1 c. milk and 1 c. shredded cheese.

Cook on low, stirring, till smooth, and then add to cooked noodles.
