Basic Chicken Vegetable Soup


This is a basic recipe. The quantities are left to your discretion, depending on the amount of servings you need.
Chicken, cooked and shredded (I use leftovers from a baked whole chicken)
Chicken broth
Onion, chopped
Garlic, minced
Diced Tomatoes
Desired Vegetables—chopped celery, carrots, peas, potatoes, cauliflower, etc.
Seasonings—salt/pepper, powdered onion and garlic, bay leaf, sage, thyme. Optional: few shakes of rosemary, parsley
Optional—rice or barley


In a pot, combine all ingredients and simmer till veggies are soft. Add water or stock/both as needed.
